When life gives you Monday, dip it in glitter and sparkle all day!

  • 1 cup of your favorite frozen fruit (thawed for about 5 minutes to soften)

  • 1 cup of plain yogurt (greek, coconut, almond, soy...)

  • 1 TB of flaxseeds

  • 1/2 TB of raw, unfiltered honey

  • a handful of your favorite nuts (cashews, walnuts, pecans...)

  • a handful of your favorite seeds (pumpkin, sesame...)

  • a handful of flaked coconut

  • a handful of your favorite dried fruit (pineapple, cherries, blueberries...)


Let's Eat

Preheat your oven to 400 degrees.

In a small skillet, combine nuts, seeds, and coconut.

Cook until lightly browned (5 - 7 minutes).

Remove from oven and gently mix-in the dried fruit.

Let cool while you mix your yogurt.

In a blender, mix the softened fruit, yogurt, flaxseeds, and honey on high speed until well blended.

Pour into individual serving bowl.

Top with nut mixture.

My fav! Cashews, pumpkin seeds, coconut & dried pineapple atop coconut milk yogurt with tropical fruit! Yummy.


  • 1 large or 2 medium yellow or red potato, thinly sliced

  • 1/2 red onion, roughly chopped

  • a handful of crimini or portobello mushrooms, roughly chopped

  • 1 - 2 TB of chopped herbs (thyme & rosemary are my favorites)

  • a handful of baby kale, stems removed

  • 1 - 2 cloves of garlic, minced

  • 6 eggs

  • salt & pepper

  • extra-virgin, unfiltered olive oil

  • shredded pecorino cheese

Let's Eat

Preheat your oven to 400 degrees.

If you have a mandolin slicer, use it to slice potatoes to 1/8 inch, if not slice them as thin as possible.

Combine potatoes, red onion, mushrooms about a TB of Olive Oil, herbs, salt and pepper in large mixing bowl.

Cover the bottom of a medium-sized, oven-safe skillet (I use an iron skillet) with the mixture.

Cook until tender (10 -15 minutes).


While potatoes cook, lightly whisk eggs in medium bowl. Add kale and garlic. Salt and pepper to taste. Gently combine. 


Remove potatoes from oven and pour egg mixture over the top. Place skillet back in oven until eggs are set (5 - 8 minutes). Remove from oven and top with shredded pecorino cheese. Cut into 6 - 8 pie shaped servings.

Potatoes about to go into the oven...bring on the eggs!
